Maybe it’s because I went through my breast augmentation recovery with a child, but freezer meals were a God send! Eating whole and clean foods are important to me, so I avoided calling up the takeout restaurants. That wouldn’t have been possible without some pre-planned meals and snacks, which were waiting on me when I got home from my breast revision.
Nutrition is just as imperative as rest during your recovery.
Since the early phases of recovery involve some inflammation, the ingredients in these recipe are focused on counter-acting swelling and pain!
1 Onion Chopped
3 Garlic Cloves Minced
1 Inch Ginger Grated
2 Carrots Chopped
2 Sweet Potatoes Cubed
1 TSP Tumeric
Curry Powder 1 TSP
Salt & Pepper ½ TSP each
4 Chicken Breasts Cubed
1 Box of Chicken Broth
After prepping your ingredients, put your vegetables in one freezer safe bag and your cubed chicken breasts in another. Make sure you label them and then throw them in the freezer.
I put my pre-measured broth in a big mason jar in the fridge and all the spices in a small plastic bag in a cabinet.
When you’re ready to eat your soup, put 1TBS of olive oil in a soup pot on the stove at medium heat. Put your frozen vegetables and chicken in and simmer until they’re thawing well.
Next add your spices and sauté for 2-3 minutes. Then add your broth.
Cover pot and let simmer, stirring occasionally for 30 minutes or until veggies are soft and chicken is cooked through.
Every single ingredient in this soup was healing and nourishing. It just so happened to be chilly and rainy on the day I made this, which seemed quite perfect. But this was so good, I have a feeling I’ll be making this soup well into summer! :-)
