After surgery your body needs all the help it can get to ensure you have the best healing experience.
There are sooooo many ways you can have a good healing journey, but perhaps one of the most important ways is your diet. After all, you are what you eat.
I’m putting together some happy healing recipes for you (perfect for prepping ahead of your surgery) and this recipe is a vegan and vegetarian-friendly nutritious option.
My Instant Pot Creamy, Curried Lentils
This is a family favorite in my house and is an easy recipe that I prep pretty much every week. Always opt for organic products when you can (and when the budget allows).
To get started you will need:
An instant pot (pressure cooker)
1 1/2 cups of green lentils
1 can organic full-fat coconut milk
1 can tomato sauce
2 tbsp tomato paste
1 tsp dried basil
1 tsp dried oregano
Curry powder to taste
1/2 cup filtered water
Salt to taste (optional when serving)
Pour the 1 1/2 cups of green lentils into the instant pot and pour over the cans of coconut milk and tomato sauce. Add the 2 tablespoons of tomato paste (this thickens the recipe) and stir in 1 teaspoon of basil (dried is okay), 1 teaspoon of oregano and sprinkle over some curry powder (as much or as little as you want, giving the dish a nice warm feeling). Pour in 1/2 cup of water and stir the dish well.
Put the lid on and pressure cook on high for 20 minutes, letting the steam release naturally (don’t do the quick release). The total time in the pot will be about 40 minutes.
This is a great recovery recipe as it’s healthy, high in protein (super important for healing) and it’s really filling comfort food, which means you’re less likely to dive for the junk. Also, it’s super easy so any helpers you enlist during your recovery can follow this recipe for you!
It’s delicious served with cauliflower rice, quinoa or brown rice.
